Soybeans
Most soybeans are harvested when they are fully mature. At this stage, most are dry and yellow, although there are other varieties, i.e. black or brown soy beans. In Asian countries and in recent years in the U.S., soybeans are sometimes harvested before full maturity when they are still green (called Edamame). These are cooked as a vegetable side dish and a source of protein or simply used as a healthy and delicious snack or appetizer for adults as well as children.
You can find these green soybeans in produce sections of major supermarkets and health food stores. They can also be found in the canned and frozen food section. They can be prepared simply by cooking them for 10-15 minutes while they are still in their pods or once they are removed.
Dried soybeans need to be re-hydrated by soaking in water preferably overnight before cooking for at least three hours until they are softened and ready to eat and can be very dellicious by adding your choice of spices. |
